Walk past our counter on any given afternoon and you'll see it happening in real time: a waffle lifted straight off the iron, a scoop of gelato cut and set beside it, chocolate sauce poured table-side rather than drizzled back in a kitchen you can't see. That's not a presentation choice. It's the whole point.
Made-to-order sounds like a small thing until you've tasted the difference. A waffle plated the moment it's cooked keeps its structure — crisp outside, soft center — in a way that a dessert built twenty minutes ahead and held under a heat lamp simply can't. The same goes for our gelato, cut fresh per scoop rather than portioned in advance.
There's a trust element too. When you can see your dessert being built, you know exactly what's going into it — which matters if you're asking for the vegan swap, the gluten-free base, or just want to watch someone add an extra scoop of biscoff without asking twice.
Next time you're in, pull up a stool at the counter instead of a table. Watch for a minute. It's better than the photo.
